My first-ever interview for a tech role went something like this:
Interviewer: "Would you happen to know this skill?"
And the only way I could respond was, "I don’t know, but I can learn."
That’s how most of my interviews went in the beginning. They would ask questions, and being new to the industry, I would often have to reply that way.
But that didn’t last long.
As soon as "I don’t know" came out of my mouth, I would jot down what they asked so I could learn about it later. In the next interview, I would be able to answer any question I hadn’t known before.
Interviews aren’t just for the employer to suss out a candidate. They’re an opportunity for you to learn what you’re lacking and what you might need to work on. Employers aren’t there to judge or criticize you for not knowing something. If you don’t know it, you don’t know it. But don’t get caught unaware twice.

If you realize you're lacking in a subject, don’t mope because you didn’t have an answer. Find the answer and apply that knowledge to your next interview.
For example, I remember being asked about Node.js in my first interview. I had no idea what it was, but the next day, I made it a point to learn about it. I read the docs, created a server, and made sure I understood Node.js.
And guess what? I was never caught off guard about Node.js again.
Just because you don’t have the information now doesn’t mean you have to continue not knowing. If you find you don’t have an answer in an interview, write it down. Do something to ensure you won’t forget.
